"It's hard to fairly review this book. My wife is a big fan of Chef AJ, and she was looking for an SOS (salt, oil, sugar) free cookbook. I got her this one thinking it was exactly what she was looking for, however this book was written in 2011, apparently prior to Chef AJ's adoption of a nut-free and lower-calorie style of cooking. The main section of recipes are desserts. Most of the recipes are either based on nuts, or dates. I'm sure they are fantastic, however they are not what my wife was looking for. Will probably return it as a result. Also recipe books should always include photos, which this one does not."

- Chef A. J. is phenomenal and This book is worth every penny.
Since the complainers are watching Chef A J, presumably on YouTube, then you must hear her when she instructs to either replace the nuts with white beans in the Unprocessed recipes or eliminate the addition of the nuts altogether. It's not difficult. This book contains health promoting recipes. We are all on different paths and arrive at different areas of information at differing times. For where she was information-wise, at the writing of Unprocessed, she wrote what she knew to be far healthier than the Standard American Diet or the Junk Food Vegan diet she had been on previously. - If you're at all familar with Chef AJ You Tube videos, this book was a repeat of information I already knew about her. Plus, it appears that she has changed her way of eating quite a bit since this book was published. There are several ingredients in her receipes that she does not allow now (assuming you want to lose weight - which I don't). If you are interested in losing weight now, buy her newer book that was just released. I will not buy it because I believe it will be a review of what I already know. She is an engaging personality and knows how to market herself and everyone else that she has on her webcasts. To say she is passionate about her diet, weight loss, health and in general the whole-food plant based, SOS-free lifestyle is an understatement ! For me, to eat her way 100% would take some joy out of my life; I do not want to live so rigidly, but I am not a food addict and am not overweight. I am vegan 95% of the time and I do not beat myself when I make other choices, like alcohol or sugar, or if there is an egg in that cake, etc. I find her a hoot to watch and listen to though.
- Great read on Chef AJ with some tasty recipes. This book is prior to Chef AJ going deeper into achieving optimal health by removing fats from her diet. Her lifestyle plan is called Ultimate Weight Loss, which I strongly urge you to review, is helping me tremendously with the aches, pains and releasing extra fat while enjoying fresh foods.
- Read the book in several hours and set me on a path toward better health. Having been a vegetarian for almost a decade, I thought I was doing well, but now that I see how sugar, oil and fat are not included in a genuinely healthy diet because of the processing, I have thrown out most of my recipes and have adopted many of AJ's and John McDougall's. Once you whittle away the unnecessary things in your diet, whole foods taste amazing!
- Wonderful recipes that will be staples in our kitchen. I would have liked to have read more of Chef AJ's story and the WFPB philosophy. She is such a fun and vibrant personality. Even though we have access to unlimited recipes on line if you eat a plant based diet these recipes are flavorful and delicious and you don't have to adjust traditional recipes that rely on salt, oil and sugar for flavor.
Unprocessed How to achieve vibrant health and your ideal weight. - This book is amazing. I usually put post it notes on pages of recipes that I want to make and I went through A LOT of post it notes for this book during the first sitting! These are recipes that you will actually want to make and follow through on making because they sound good and they won't require you to live in the kitchen. I highly recommend.
- Chef AJ is awesome! All you have to do is, change the ingredients of your food, and you'll prevent & reverse the top killers in America. (Heart disease, Diabetes & Cancer.)
This book shows you how. It's easy. Chef AJ shows you how to make fresh fruits & vegetables taste great.
Just do what she does, and you'll have similar results.
"Unprocessed" is a must, for anyone who wants to adopt a healthy lifestyle.
